9 Course Dinner Event

When creating a multi-course dinner, I think about more than individual dishes. I consider how flavours, textures and presentation work together, how variety is maintained throughout the meal and how each course contributes something different to the overall experience.

This dinner was created as an opportunity to explore ideas that would be difficult to execute within a traditional restaurant setting. Without the limitations of a regular menu, I was able to focus on the experience as a whole, from the sequence of dishes to the way each plate was presented.

The sketches and planning work below reflect the process behind the dinner, from early concepts and plating ideas to the decisions that shaped the final menu.
