About Mayank
My work sits at the intersection of restaurant operations, culinary development, beverage programs and guest experience.
Across kitchens, dining rooms and bars, I have learned that hospitality is rarely defined by one moment. It is shaped by the menu a guest reads, the confidence of the team behind it, the rhythm of service and the details that make a place feel remembered.
Philosophy
I approach hospitality through intention. Whether I am developing a menu, refining a cocktail, supporting a team or shaping the atmosphere of a space, I think about how each decision affects the person experiencing it.
Quality, to me, is not about excess. It is about putting forward the best possible version of what is available. Ingredients may change, service may shift and plans may need to adjust, but the standard should remain. A guest should feel cared for, and the team should feel proud of what they are presenting.
The kind of environment I want to help build is one where people feel respected, supported and comfortable enough to take pride in the work. Service can be demanding, but the culture behind it should make people want to show up, contribute and grow.
My influences extend beyond traditional hospitality. Travel, interior design, fashion, photography and emerging technology all shape the way I think about atmosphere, presentation and storytelling. I also use AI as part of my creative and operational workflow, supporting research, ideation and refinement while keeping judgment, taste and human connection at the centre of the work.
Leadership
I believe strong guest experiences begin with strong teams. A restaurant or café should not only function well for the people walking in, but also for the people working inside it.
I am drawn to the process behind creating something. I enjoy taking an idea, refining it and shaping it until it feels aligned with the vision. That applies to menus, drinks, pastry, service systems and the way a space is experienced.
How I Work
Looking Ahead
Long term, my goal is to build a concept of my own: a café by day and cocktail bar by night, centered around modern pastry, thoughtful drinks and a space people genuinely want to return to.
I want the experience to feel personal without feeling overly formal. A place known for its food and drinks, but also for its warmth, its people and the story behind it.
