That idea shaped this drink. Name: Take Three

I wanted something relaxed and self-assured. Easygoing on the surface, with just enough structure underneath to know exactly what it’s doing. Refreshing, playful, and comfortable in its own lane. A drink that doesn’t try to impress, because it doesn’t need to.

What I mixed and why
Tequila blanco – clean and expressive, setting an easygoing base
A touch of mezcal – a subtle layer of smoke, felt more than tasted
Blood orange and fresh grapefruit – warmth and bitterness working together
Agave – simple, structured sweetness
Saline (2–3 drops) – sharpens and pulls everything into focus
Orange bitters – keeps the finish bright
Butterfly pea tincture (1–2 drops) – colour only, quiet and understated
Soda water – light, open, and endlessly drinkable

Built in a tall Collins glass over one large, clear ice cube with a very light smoked salt rim and a thin dehydrated citrus wheel, the experience unfolds in three beats: bright on the first sip, familiar by the second, and fully settled by the third. The smoke stays in the background, the citrus stays crisp, and the structure never asks for attention. Like the line itself, it lands easily, repeats well, and knows exactly when to stop.

It feels like the kind of drink Matthew McConaughey might be sipping in Dazed and Confused right before delivering that line. Unrushed, familiar, and confident enough not to pull focus.
